Senior Sous Chef

Japanese Cuisine | Full-Time | Immediate Start | Braeside, Melbourne

Liar Liar is looking for an experienced and driven Senior Sous Chef to join our kitchen team for an immediate start.

Liar Liar is a bold, high-energy Japanese restaurant and late-night venue, combining premium Japanese cuisine, sushi and sashimi, charcoal cooking and modern techniques with a lively dining experience.

We’re looking for someone who understands that Japanese food is about precision, restraint, quality produce and consistency — and who can bring those standards into a busy, high-volume kitchen.

This is a hands-on leadership position. We want someone who can run a service, lead from the front and maintain standards when the pressure is on.

Your responsibilities will include:

• Leading and supporting the kitchen team through busy services

• Maintaining exceptional standards of food quality, presentation and consistency

• Working across our Japanese-inspired menu, including hot dishes, charcoal cooking and premium proteins

• Supporting menu development and introducing new Japanese dishes and techniques

• Training and developing junior chefs

• Managing preparation, section organisation and service execution

• Monitoring food costs, portion control, wastage and stock

• Maintaining strong food safety, hygiene and kitchen organisation

• Assisting with ordering, stock control and kitchen systems

• Stepping up to lead the kitchen in the Head Chef's absence

We want a chef who is genuinely passionate about Japanese cuisine.

Previous experience working with Japanese food is highly regarded, particularly experience with seafood, Japanese ingredients, sauces, knife work and traditional or modern Japanese cooking techniques.

You’ll ideally have:

• Strong Senior Sous Chef or experienced Sous Chef background

• Japanese restaurant experience strongly preferred

• Excellent understanding of Japanese flavours, ingredients and techniques

• Strong knife skills and attention to detail

• Experience in premium, high-volume restaurants

• Confidence running a busy service

• Strong leadership and communication skills

• A calm, organised approach under pressure

• High standards around presentation, cleanliness and consistency

• A genuine desire to develop yourself and the chefs around you

This isn't a position where you'll be cooking the same basic menu every day.

Liar Liar is continuing to evolve its Japanese offering, and we want a Senior Sous Chef who wants to be part of that evolution.
