An opportunity currently exists for a NPD Developer, on a full-time permanent basis. The purpose of the NPD Developer role is to lead and support the development and commercialisation of innovative, high-quality bakery products that align with market trends, customer needs, and business objectives. This role is responsible for managing the end-to-end product development process—from concept ideation and formulation through to scale-up, launch, and post-launch review—while ensuring compliance with food safety, regulatory, and quality standards. 

Key Responsibilities 

• Develop bakery products from concept (consumer trends, pain points, Customer brief) to commercialization 

• Create test / prototype formulations for bakery (including Shelf-life testing and sign offs with Customer/internal teams, costings, sensory appeal) 

• Apply comprehensive technical and practical baking expertise to consistently provide high-quality products aligned with customer requirements, detailed specifications, and manufacturing capabilities. 

• Maintain detailed documentation of formulations, processes, and test bake results. 

• Develop pre-production trials and production outcomes 

• Engage with suppliers to explore a comparative outcome, as well as identify new ingredients, trends, innovations 

• Work with the regulatory team on all new products to meet relevant food safety, regulations, sustainability and labelling needs. 

• Provide correct formular information and supporting documents for audits and certification clarity, working closely with Quality and site manufacturing teams. 

• Sustainability and Nutrition - incorporate relevant health and wellness trends through sustainable ingredients, claims and Health Star Ratings, working closely with R&D teams 

About You 

To be successful in this role, you will have: 

• Strong technical knowledge of baking ingredients, processes, and equipment.  

• Understanding of ingredient functionality (e.g., flour types leavening agents, gluten yeast types).  

• Familiar with organoleptic and sensory evaluation, shelf-life testing, and product scaling.  

• Proficiency in formulation calculations and Costings Proficient in Word, excel, able to use Optiva/other formulation data bases 

• Able to identify and translate consumer trends in baking. 

• 2–5+ years of experience in bakery product development, formulation, or R&D (depending on role level). Proven track record of launching successful bakery products from concept to market.  

• Experience with both artisanal and industrial bakery
