Cook

Cook duties and responsibilities:

• Prepare and cook a variety of dishes, ensuring consistency in quality, flavour, and presentation.
• Prepare marinades, sauces, seasonings, and other ingredients in accordance with established recipes.
• Operate and maintain commercial cooking equipment at appropriate temperatures to ensure proper cooking and food quality.
• Assist with menu planning and contribute ideas for new and seasonal dishes.
• Weigh, measure, and mix ingredients to prepare marinades, doughs, sauces, and other food components.
• Monitor the temperature of cooking equipment to ensure consistent cooking and food quality.
• Ensure proper storage of prepared food, ingredients, and raw materials in accordance with FIFO (First-In-First-Out) and safe food handling practices.
• Prepare dishes in accordance with special dietary requirements, including vegetarian, vegan, and allergen-sensitive options.
• Check the freshness and quality of ingredients before and during food preparation.
• Present and garnish dishes attractively in accordance with the restaurant's presentation standards.
• Assist other kitchen staff with food preparation and cooking duties and provide guidance to junior kitchen staff where required.
• Adhere to workplace hygiene, food safety, and occupational health and safety standards in accordance with Australian regulations.

Applicants for the Cook role must have:

• Relevant qualifications in Commercial Cookery or a related discipline.
• Minimum 1 year of relevant experience in a commercial kitchen environment.
• Strong knowledge of food preparation techniques.
• Ability to work efficiently in a fast-paced environment.
• Strong knife skills and food preparation techniques.
• Good understanding of ingredients, seasonings, and cooking methods.
• Food safety and sanitation practices.
• Good plating and presentation skills.
• Excellent communication and teamwork skills.

A salary of $79,500 - $82,000 will be offered to the successful candidate for the Cook role

Senior Chef

Senior Chef duties and responsibilities:

• Managing professional kitchen operations - planning, directing, and coordinating food preparation activities in a kitchen to ensure smooth and efficient operations. Developing and implementing operational policies, procedures, and standards to maintain high performance and consistent service quality.
• Hire and train kitchen staff - recruit, train and supervise kitchen staff and promote a positive and professional kitchen environment.
• Providing guidance to other chefs - supervising the other chefs and kitchen staff and advice on preparation methods, presentation style and flavour profiles to elevate the quality of dishes.
• Overseeing the food preparation and creation process - supervising all stages of food preparation, cooking, and plating to ensure compliance with food safety and quality standards.
• Ensuring the quality of dishes - conducting regular inspections of ingredients and supplies to ensure freshness and quality.
• Maintaining inventory - must be able to stock control, monthly stock takes and communicate with current suppliers.
• Creating menus - menu planning, daily specials, recipes and new promotion ideas and dishes to attract customers.
• Directing kitchen operations - managing kitchen workflows and ensuring food preparation and presentation are of a consistent high standard.
• Checking and approving dishes before serving - ensuring dishes are served promptly to maintain customer satisfaction and quality.

Applicants for the Senior Chef role must have:

• Relevant qualifications in Commercial Cookery or a related discipline.
• Demonstrated minimum 2 years' experience as a Chef or in a similar role.
• Clear and effective communication.
• Effective leadership and ability to manage and motivate kitchen staff.
• Strong culinary expertise with knowledge of cooking techniques.

A salary of $85,000 - $92,000 will be offered to the successful candidate for the Senior Chef role.
