Head Chef

About the role

ChefHire Contract Catering runs venue kitchens as a business. We take over pub and club bistros, put in our own systems, menus and people, and run them properly. We are looking for a Head Chef to run one of our Ballarat North kitchens. Your responsibilities in running the kitchen include rosters, ordering, stock and service. Menus, recipes and costings are already set, and you report to a group executive chef.

Key responsibilities

• Run daily service across lunch and dinner
• Hold food quality and consistency to the ChefHire standard
• Write the kitchen roster to the labour budget
• Order, receive and control stock to hit food cost targets
• Keep the kitchen clean, compliant and food safe
• Train and develop the kitchen team

About you

• Time served as a head chef, or a strong sous chef ready to step up
• Solid pub or bistro volume experience
• You can cost a dish and read a labour percentage
• Trade qualification or equivalent experience
• Food safety supervisor certificate, or willing to get one
• Full working rights in Australia
