We are a seven day a week entertainment venue with a range of racing and non-racing offerings including dining facilities, large function & conference rooms, 41 room four-star hotel, busy gaming lounge and sports bar & TAB.

The Commis Chef assists in the smooth operation of the kitchen by performing cooking and food preparation duties. This position may prepare and present hot and cold dishes for a la carte and function services, as well as support the ongoing development of the kitchens by maintaining high-quality products and production levels.

RESPONSIBILITIES

Operations Performance

• Prepare and service all food items for a la carte and function menus according to Tabcorp Park recipes and standards.
• Actively share ideas, opinions and suggestions in daily shift briefings
• Maintain proper rotation of product in all chillers to minimize wastage/spoilage
• Have full knowledge of all menu items, daily features and promotions
• Ensure the cleanliness and maintenance of all work areas, utensils, and equipment
• Follow kitchen policies, procedures and service standards
• Follow all safety and sanitation policies when handling food
• Perform any other duty that may be reasonably regards as relevant to the job as directed by management.

• Build effective work relationships.  Work co-operatively with team members, assist others, contribute to team performance and demonstrate support for Melton Entertainment Park’s commitment to a harassment free workplace.
• Communicate with all staff in a courteous and professional manner. 

Customer Service

• Deliver excellent customer service by demonstrating Tabcorp Park service and performance standards applicable to the kitchen

• Adhering to Tabcorp Park values, policies and procedures, in particular, Food Handling and Hygiene Standards, Workplace Health & Safety, Stock Control and Rotation, maintaining a professional appearance etc.
• Participating in performance reviews according to Tabcorp Park policy.
• Self-directed learning and development as well as undertaking any required training.
• Identify opportunities for continuous improvement in work processed and procedures and adapt to change in workplace practices.
• Consistently offer professional, friendly and proactive service while supporting fellow Colleagues

SKILL AND EXPERIENCE

Qualifications and Experience

• Certificate III in Hospitality (Commercial Cookery) or equivalent experience

OTHER REQUIREMENTS

The applicant must possess and maintain the following documentation:

• CPR/ First Aid Certificate
• Police Check
• Food Handling Supervisor Certificate

AVAILABILITY

Must be available to work a rotating roster including days, nights, weekends and all major events.
