Reporting directly to the Operations Manager, you’ll work across retail service and back-of-house preparation while helping to oversee the daily operation of the Burraneer butchery.
You’ll prepare and portion premium meat, produce value-added products, maintain attractive retail displays and provide knowledgeable, friendly service to our customers.
As 2IC, you’ll help coordinate the team, maintain high standards throughout the store and take responsibility for the butchery when the Operations Manager is away.
We currently have a full-time position available, offering flexibility for the right candidates. Weekend availability is essential.
Your RoleCustomer Service: Provide friendly, professional service and knowledgeable product and cooking advice.
Precision Cutting: Cut, trim, bone and portion meat accurately and consistently.
Retail Presentation: Prepare fresh, attractive and well-stocked displays that showcase our premium products.
Value-Added Production: Assist with other house-made products.
Team Leadership: Help coordinate, guide and support the team during daily trade.
Stock Management: Assist with ordering, receiving, rotation, yields and waste control.
Quality Control: Monitor product freshness, portioning, presentation and consistency.
Daily Operations: Support opening, closing and the efficient day-to-day running of the butchery.
Food Safety: Maintain accurate records and uphold all hygiene, sanitation and compliance requirements.
Cleanliness: Keep preparation areas, equipment, cool rooms and retail displays immaculate and organised.
Safe Work Practices: Operate knives, bandsaws and other butchery equipment safely and correctly.
Manager Responsibility: Lead the department and support the team in the Operations Manager’s absence.
The Trade: A recognised butchery qualification and proven experience as a qualified Butcher, senior Butcher or Butchery manager / 2IC.
The Skills: Strong knife, portion-cutting and meat-preparation skills.
The Experience: Confidence working across retail displays, customer service and value-added production.
The Leadership: The ability to support and guide a team while remaining composed under pressure.
The Standards: Strong knowledge of food safety, hygiene, stock rotation and compliance.
The Presentation: A clean, professional appearance and pride in maintaining an immaculate workplace.
The Attitude: Friendly, reliable, energetic and comfortable speaking with customers.
The Organisation: The ability to manage your own section without supervision while maintaining consistency and high standards.
The Availability: Flexibility to work across a 5 day rotating roster, including one weekend day.
