The Sporting Club Hotel has quickly become a true local favourite since opening nearly two years ago. It’s a proper pub, built around good food, a pint with mates, and a relaxed, welcoming atmosphere.

We’re now entering our next stage of growth with the expansion of the Sporting Club “Backyard”. This includes a third bar, a second kitchen, and an additional food offering, significantly increasing the scale and pace of the venue. With this comes higher patronage and the need for strong, capable kitchen leadership.

We're looking for an experienced Bar Manager to lead our beverage operation and join our senior leadership team.

About the Role
This is a full-time position, with evening and weekend availability essential.

Working alongside the Venue Manager and Assistant Venue Manager, you'll be responsible for the day-to-day operation of the bar while contributing to the broader direction of the venue.

The role oversees the Main Bar and Courtyard Bar, and will play a key role in the development and opening of our new Backyard Bar, due for completion later this year. This presents an opportunity to influence the venue's beverage offering, service standards and bar culture as the business continues to evolve.

The role is predominantly floor based. You'll lead service from the front, build relationships with guests, mentor the bar team and ensure consistently high standards across every service.

We're looking for someone who genuinely enjoys pubs. Someone who values conversation, knows their regulars, has a passion for beer and understands that great venues are built through consistency, attention to detail and genuine hospitality.

Key Responsibilities

• Lead the day-to-day operation of the bar and support the wider venue leadership team.

• Oversee service across the Main Bar, Courtyard Bar and the new Backyard Bar.

• Continue to develop our beer program through seasonal tap rotations, supplier relationships and staff education.

• Lead the cocktail program, ensuring it remains seasonal, approachable and commercially considered.

• Monitor emerging national and international beverage trends and translate them into relevant guest experiences.

• Manage beverage ordering, cellar operations, stock control and cost management.

• Recruit, train, mentor and develop the bar team.

• Maintain exceptional standards of presentation, cleanliness and organisation across all beverage areas.

• Build strong relationships with breweries, distilleries, suppliers and industry partners.

• Contribute to a positive team culture and consistently high guest experience.

About You

• Previous experience as a Bar Manager or in a senior bar leadership role.

• Strong knowledge of beer, cocktails and beverage operations.

• Experience leading and developing hospitality teams.

• Commercially minded, with experience in stock control and beverage cost management.

• A genuine passion for pubs, people and hospitality.

• Someone who enjoys building relationships with guests and creating a welcoming local.

• Current Victorian RSA.
