About the role
An opportunity exists to lead the hospitality operation at one of Victoria’s most recognised sailing clubs.
Sorrento Sailing Couta Boat Club is seeking an experienced Hospitality Manager to take overall responsibility for our food and beverage operation, including restaurant, bar, kitchen and events delivery.
This is a senior, hands-on operational role reporting directly to the General Manager.
The role will lead our Head Chef, Restaurant Managers, Bar Manager and Events Manager, with responsibility for creating a consistent hospitality experience for members and guests across both front and back of house. We are looking for someone who understands the whole hospitality operation.
You will need strong practical knowledge of commercial kitchen operations, combined with the ability to lead front of house service, develop people and maintain strong operational and financial controls.
Key responsibilities include:
• Lead the overall restaurant, bar, kitchen and event hospitality operation.
• Provide leadership and direction to the Head Chef, Restaurant Managers, Bar Manager and Events Manager.
• Drive service standards and a strong member-focused hospitality culture.
• Work closely with the Head Chef on menu planning, food quality, kitchen performance, food costs, yields, wastage and purchasing.
• Manage labour, rostering and productivity across the hospitality operation.
• Develop and monitor budgets, margins, stock controls and other key F&B performance measures.
• Maintain strong food safety, workplace safety and operational standards.
• Oversee recruitment, induction, training and development of hospitality staff.
• Ensure effective communication and service flow between the kitchen, restaurant, bar and events teams.
• Maintain supplier relationships and appropriate purchasing and stock controls.
• Develop and maintain operating procedures and service standards.
• Take a visible, hands-on leadership role during key services and busy trading periods.
• Work closely with the General Manager and other Club departments to prepare for major events, regattas and peak summer trade.
About you
You may have developed your career through front of house management, broader hospitality leadership or kitchen operations. More important is your ability to understand and manage leaders on both sides of the operation.
You will have:
• Strong experience in hospitality or food and beverage management.
• A sound understanding of commercial kitchen operations and food cost management.
• Experience leading managers and larger operational teams.
• Strong knowledge of restaurant and bar service.
• Commercial awareness across labour, purchasing, margins and stock control.
• A practical, organised and hands-on management style.
• Strong communication and people leadership skills.
• The confidence to establish standards and hold people accountable.
• The ability to remain visible and composed during busy services.
• Current RSA, with First Aid qualifications highly regarded.
Previous experience within a club, hotel, venue, restaurant group or similarly complex hospitality operation would be well regarded.

Based in Sorrento on Victoria’s Mornington Peninsula, Sorrento Sailing Couta Boat Club is home to Australia’s largest Couta Boat fleet.
The Club has a strong membership base and a busy hospitality operation that changes significantly through the year, particularly during the summer and sailing seasons. The Hospitality Manager will play an important role in continuing to improve the quality, consistency and commercial performance of the Club’s hospitality offering.
This position would suit an experienced hospitality leader who enjoys being close to the operation, developing people and having genuine responsibility for both the kitchen and front of house.
