About the role
The Margarita Daze team is opening a brand-new seafood-focused restaurant this Spring in Ettalong on the NSW Central Coast. We're building the kitchen team from the ground up, and we're looking for a Sous Chef who wants more than just a job — someone who wants to help shape a restaurant from opening night.
About the role
You'll work alongside our michelin trained chef/owner to bring a seafood-driven menu to life — think precision fish handling, sashimi and raw preparations, and dishes built around the best of what's landing locally. This is a genuinely hands-on role: setting up systems, training the brigade, developing dishes, and getting the kitchen running the way it should from day one.
For the right person, this isn't a ceiling — it's a foundation. As the restaurant grows, there's a real pathway to step up into the Head Chef role. We want someone who'll take ownership of this kitchen and make it their own, not just follow someone else's lead.
What we're looking for
Solid experience as a Sous Chef or senior chef de partie, ideally with seafood-focused or fine-dining experience
Confidence with fish butchery, and seasonal menu development. Experience with native australian produce is a plus
Someone who thrives in a new-opening environment — comfortable building processes, not just following them
A leader who can train and motivate a team, and who takes pride in consistency and standards
Genuine ambition to grow into a head chef position
