The George on Collins is a premium bar, restaurant and events destination located in the heart of Melbourne's CBD. Renowned for exceptional food, innovative cocktails, premium wines and outstanding service, we welcome thousands of guests each week across restaurant dining, corporate functions, private events and late-night hospitality.

As we continue to grow, we're looking for experienced hospitality leaders to join our management team in one of two key roles:

• Bar Manager

• Restaurant Manager

The Roles

Bar Manager

You'll be responsible for leading our bar operations, driving service standards, developing our beverage offering and inspiring a talented team in one of Melbourne's busiest premium venues.

Key Responsibilities

• Lead the daily operation of multiple bars and beverage service

• Recruit, train and develop a high-performing bar team

• Maintain exceptional service standards during high-volume trading

• Manage stock control, ordering, inventory and supplier relationships

• Create and develop seasonal cocktail menus and beverage initiatives

• Ensure compliance with RSA, licensing, health and safety standards

• Work closely with the Restaurant Manager and Head Chef to deliver seamless guest experiences

• Assist in planning and executing functions, events and activations

We're Looking For

• Previous Bar Manager or senior leadership experience in a premium, high-volume venue

• Extensive knowledge of cocktails, spirits, wine and premium beverages

• Strong leadership and coaching skills

• Excellent organisation and stock management experience

• A passion for innovation and creating memorable guest experiences

• Availability to work evenings, weekends and late nights

Restaurant Manager

You'll oversee the day-to-day restaurant operation, ensuring exceptional guest experiences while leading our front-of-house team and coordinating busy restaurant and event services.

Key Responsibilities

• Lead and motivate a professional front-of-house team

• Deliver outstanding customer experiences across restaurant and function service

• Manage rostering, labour costs and daily venue operations

• Coordinate event setup and execution

• Work alongside the Head Chef and Bar Manager to ensure smooth service

• Train, mentor and develop team members

• Monitor compliance, cash handling and venue procedures

• Drive operational improvements and maximise profitability

• Act as Duty Manager across restaurant, bar and function operations

We're Looking For

• Previous Restaurant or Venue Management experience

• Strong food and beverage knowledge, including wine and cocktails

• Excellent leadership, communication and problem-solving skills

• Experience with POS systems, stock control and labour management

• Current RSA and Food Safety certificates

• High attention to detail with a hands-on leadership style

• Availability for nights, weekends and public holidays
