Experienced Manoush Maker / Lebanese Pizza Baker

About the role

This is a hands-on position for an experienced baker who understands the complete manoush-making process—from mixing, fermenting and portioning dough through to preparing toppings, managing the oven and maintaining consistent quality during busy service periods. The successful applicant will be reliable, organised and capable of producing authentic, high-quality manoush efficiently and consistently.

Key responsibilities

• Prepare, mix, portion and proof dough for manoush, lahm bi ajeen and other Lebanese flatbreads.

• Monitor dough fermentation and adjust preparation according to temperature and service requirements.

• Prepare fresh toppings, including zaatar, cheese, minced meat mixtures, labneh and vegetables.

• Operate deck or conveyor ovens and maintain consistent baking times and product quality.

• Manage daily preparation to ensure the bakery is ready for morning service.

• Maintain consistent portion sizes, presentation and flavour across all products.

• Monitor ingredient levels, minimise wastage and assist with stock ordering.

• Liaise with suppliers when required to maintain reliable ingredient supply.

• Maintain a clean, organised and food-safe work area.

• Follow all food safety, hygiene and workplace safety requirements.

About you

• Proven experience making manoush or Lebanese flatbreads in a commercial bakery, café or pizzeria.

• Strong knowledge of dough mixing, fermentation, proofing and handling.

• Experience preparing traditional Lebanese toppings and fillings.

• Confidence operating commercial bakery ovens.

• The ability to maintain quality and speed during busy service periods.

• Strong organisation, time-management and stock-control skills.

• A current Food Safety Certificate or willingness to obtain one.

• Reliability, punctuality and availability for early-morning and weekend shifts.

• A positive, respectful attitude and strong team spirit.
