About the role

AGNII Eatery Bar is opening in late September and is building a founding team across multiple hospitality positions. The venue is centred on fire-based cooking and exceptional produce, led by Owner, Director and Executive Chef Gayan Pieris. We are seeking passionate, professional hospitality professionals to deliver refined service and create memorable dining experiences.

Key responsibilities

Responsibilities vary by position:

Hosts:

• Welcoming guests with warmth, confidence and professionalism

• Managing reservations, bookings and guest enquiries

• Coordinating seating and ensuring the dining room flows smoothly

• Escorting guests to their tables and providing a polished introduction to the experience

• Maintaining accurate knowledge of bookings, table availability and guest preferences

• Communicating closely with waitstaff and management throughout service

• Assisting with guest requests and ensuring a seamless experience from arrival to departure

• Maintaining an immaculate and welcoming entrance and reception area

Bartenders:

• Preparing and presenting cocktails and beverages to a consistently high standard

• Providing knowledgeable, personalised and attentive service

• Demonstrating strong product knowledge and confidently making recommendations

• Maintaining impeccable bar presentation and cleanliness

• Ensuring the bar is fully stocked and service-ready

• Working closely with the floor and kitchen teams to deliver seamless service

• Following all responsible service and venue procedures

Bar Backs:

• Maintaining stock levels of glassware, ice, beverages and bar supplies

• Assisting bartenders throughout service

• Clearing, washing and polishing glassware to a high standard

• Restocking fridges and maintaining organised storage

• Keeping the bar and surrounding areas impeccably clean

• Assisting with deliveries, stock rotation and preparation

• Supporting the bartending team to maintain an efficient service

Section Waiters:

• Providing polished and attentive table service

• Developing strong knowledge of menu, ingredients and beverage offering

• Confidently explaining dishes, answering questions and making recommendations

• Taking orders accurately and communicating effectively with the kitchen and bar

• Anticipating guest needs and delivering discreet, personalised service

• Maintaining exceptional presentation and attention to detail throughout service

• Ensuring tables are impeccably presented and maintained

• Working closely with the wider team to deliver seamless service

Runners:

• Delivering food and beverages promptly and accurately to the correct table and guest

• Assisting with the delivery of wine, cocktails and other beverages during service

• Understanding the menu and confidently describing dishes when required

• Checking presentation and ensuring food and beverages reach guests at the appropriate standard

• Communicating effectively between the kitchen, bar and front-of-house team

• Assisting waitstaff with clearing, resetting and maintaining tables

• Maintaining impeccable cleanliness and organisation throughout the venue

• Supporting the wider team wherever needed during busy service periods

About you

About us

AGNII Eatery Bar is a new dining destination opening in late September. The name draws inspiration from the Sanskrit and South Asian concept of Agni, meaning fire. Fire is central to the identity of AGNII, reflected in the approach to cooking over an open flame and the belief in using fire to bring out depth, character and natural flavour in exceptional produce. At the heart of AGNII is Gayan Pieris — Owner, Director and Executive Chef, bringing years of experience, a passion for exceptional produce and a distinctive culinary vision shaped by his Sri Lankan heritage and Australian fine dining experience. Gayan's approach to cooking is grounded in seasonality, quality produce, meticulous technique and a deep respect for hospitality. His career has included leadership roles at respected Australian hospitality venues, including Polperro Vineyard Dining and Many Little Bar & Dining, where his work was recognised with Chef Hats from The Age Good Food Guide.
