JJJ Bros Meat is a leading Korean butcher wholesaler specialising in premium meats for Korean BBQ restaurants and retail customers. We are seeking an experienced Korean Butcher / Smallgoods Maker to join our team and support our growing wholesale and retail operations.
Key duties and responsibilities
Remove bones, trim fat, and cut, mince and grind meat into specific shapes and sizes suitable for Korean dishes such as bulgogi, galbi and other traditional recipes.
Prepare traditional Korean cuts, marinate, season and cure special cuts in accordance with Korean culinary practices and house recipes.
Select and prepare meat to produce Korean smallgoods, such as sausages and other processed products, including making seasonings and pickles by mixing spices, salt and other ingredients.
Operate meat processing equipment, including machines to grind, mix, mince and tenderise meat, and equipment used in the production of smallgoods (e.g. sausage-filling and smoking equipment).
Inspect meat for quality, freshness and presentation, ensuring all products meet Australian health and safety standards as well as Korean culinary expectations.
Advise customers on the suitability and uses of various Korean meat cuts, and provide cooking and preparation tips specific to Korean cuisine.
Arrange and display meat and smallgoods products for retail sale to maximise quality, appearance and customer appeal.
Monitor inventory levels, order supplies, receive and inspect deliveries, and store meat correctly to prevent spoilage, with particular focus on ingredients used in Korean cuisine.
Follow all food safety regulations, infection control guidelines and hygiene practices, and clean and sanitise equipment and work areas in accordance with Australian standards.
Train and supervise junior staff and apprentices in Korean butchery techniques, safe equipment use and proper food handling procedures.
Qualifications, skills and experience
AQF Certificate III in Meat Processing (or equivalent) including at least two years of on‑the‑job training, or AQF Certificate IV.
Minimum 3 years of relevant experience as a butcher and/or smallgoods maker, preferably with exposure to Korean meat cuts and preparation methods.
Sound knowledge and understanding of current food safety, infection control guidelines and workplace health and safety standards.
Ability to work autonomously, demonstrate initiative and resolve problems in a fast‑paced environment.
Strong communication skills with the ability to work effectively as part of a team and provide excellent customer service.
Positive, friendly attitude, good time management skills and a high level of attention to detail.
Availability to work on a rotating roster, including weekends and public holidays, as required.
