An exciting opportunity has become available for an experienced Precinct Sommelier to join Maestro Hospitality, working across a’Mare and Vista’Mare at Crown Sydney.

Working closely with our Assistant Head Sommelier, this role will support the delivery and development of the wine program across both venues. It is an ideal opportunity for a highly skilled wine professional who enjoys both refined restaurant service and the energy of a broader hospitality precinct.

You will work closely with the Beverage Director, Venue Managers, service teams and chefs to ensure our wine service, team knowledge and guest engagement consistently reflect the standards of Maestro Hospitality.

About the Venues

a’Mare is Maestro Hospitality’s flagship Italian dining destination at Crown Sydney, led by Chef Alessandro Pavoni. Known for polished service, tableside theatre and a strong focus on premium Italian produce, a’Mare offers an elevated yet genuinely warm approach to Italian hospitality.

Vista’Mare brings a more relaxed and energetic style to the precinct, with a focus on Italian aperitivo culture, spritz, wine, cocktails and casual dining.

Together, the venues provide an opportunity to work across two distinct hospitality experiences while helping build a cohesive and engaging wine culture throughout the precinct.

The Role

As Precinct Head Sommelier, you will:

• Work closely and collaboratively with the Beverage Director across the wine operations of a’Mare and Vista’Mare.
• Deliver knowledgeable, engaging and personalised wine service across both venues.
• Provide confident wine recommendations and pairings tailored to our menus and individual guest preferences.
• Support the development, maintenance and execution of wine lists across the precinct.
• Maintain excellent knowledge of Italian wine regions, varietals and producers, alongside key international regions.
• Drive wine sales through genuine guest engagement and thoughtful recommendations.
• Support wine ordering, stock control, cellar organisation and inventory management.
• Assist with regular wine training and tastings to build the knowledge and confidence of our FOH teams.
• Work collaboratively with Restaurant Managers, Sommeliers, Chefs and the broader leadership team.
• Maintain exceptional wine service standards, including storage, presentation, decanting and glassware.
• Build strong relationships with suppliers, winemakers and industry partners.
• Assist with wine dinners, special events, masterclasses and other precinct activations.
• Act as a wine ambassador for Maestro Hospitality and contribute to a strong wine culture across both venues.

About You

We are looking for someone who:

• Has significant experience as a Sommelier within premium, hatted or fine-dining restaurants.
• Has strong knowledge of Italian wines and a genuine interest in Italian food and wine culture.
• Holds WSET Level 3 or equivalent wine qualifications, or has comparable demonstrated industry knowledge.
• Is confident discussing both premium and approachable wines with guests.
• Understands commercial wine operations, including margins, stock management and beverage cost control.
• Is a collaborative team player who is comfortable working alongside senior wine leadership.
• Has strong communication skills and enjoys developing others through training.
• Can adapt their service style between refined dining and a more relaxed, high-energy environment.
• Has excellent attention to detail and presentation.
• Holds a current NSW RSA.
• Has full Australian working rights.
