Named after the 7-metre- tall, cast-iron sculpture Laura by Jaume Plensa that looks into the dining space. The 45-seat, Laura offers guests an unhurried dining experience that elevates the simple luxuries of time, space, comfort, and attention. We focus on the very best ingredients. Each dish is carefully considered, ensuring that the guest journey is as authentic and beautiful as our surrounds.
Culinary Director Josep Espuga originated from Catalonia, Spain, with a multi-Michellin star-studded CV featuring Mugaritz, Nahm, and New York’s Degustation. Due to an internal promotion, Josep is in search for a talented and experienced Chef de Partie, who is seeking to continue their journey of culinary excellence and career development in a safe and reliable work environment.

About The Role
Full time permanent position; shifts on a rotating roster
Rosters based on a 38-hour working week over 5 days with additional benefits and overtime.
Excellent remuneration and working conditions
Work under the direct tutelage of the Culinary Director and senior team in a Two-Hatted kitchen environment
Work with some of Australia’s most exquisite ingredients
Uniforms supplied and laundered
About You
To be considered for this role you must be:
You must have a Certificate IV in commercial cookery
You must have a minimum of 2 years experience in a similar environment
Passionate about working with amazing ingredients and produce
Express a desire to meet and work alongside primary producers
Fine-Dining experience preferred
A respectful person and a good communicator
Lead a section of the kitchen
Strong work ethic and 'can do' attitude
Ability to work in a team environment
Task driven
Able and willing to work weekends and public holidays
Hold a current Victorian driver’s licence and have own transport
