This is an opportunity to join the opening team of a brand-new six-star luxury hotel with a strong focus on world-class food and beverage, in the Yarra Valley, 50 minutes drive from Melbourne CBD.

The Opportunity

We are seeking a full-time Director of Food and Beverage with proven experience leading Front of House (FOH) operations across fine dining, cellar door, events, and hotel environments. You will be responsible for overseeing the entire guest experience within the venue, setting the operational rhythm, and maintaining the discretion and meticulous detail required at a six-star luxury level.

In this role, you will lead our FOH team, curate exceptional food and beverage service across all areas of the venue, manage cellar door operations, and shape a world-class hospitality culture. This is more than a job: it’s a chance to build a high-performing team from the ground up, with clear plans for expansion over the next three years.

What You’ll Be Doing

• Manage daily FOH operations across the Cellar Door, fine dining restaurant, hotel F&B services and private events;

• Recruit, mentor, manage and schedule front of house staff. Cultivate a high-performance culture focused on service excellence,wine and culinary knowledge;

• Elevate service standards across all touchpoints, ensuring seamless integration between restaurant and hotel operations, event execution, and retail wine offering;

• Drive and grow revenue, own FOH labor and operating budgets, manage costs and event yield.

• Partner with other members of the leadership team to design world-class guest experiences and curate large-scale private functions.

• Maintain strict compliance with health, safety, and alcohol licensing regulations across all service areas.

About You

• Proven track record in senior management looking after food and beverage operations within fine dining, resort, or luxury hotel environments.

• Demonstrated success supervising large-scale floor service, managing leaders, and developing junior staff.

• Strong expertise in list curation, inventory control, supplier negotiations, and maintaining targeted profit margins.

• Experience working directly with Executive Chefs and Sommeliers to create seamless, elevated food-and-beverage pairings.

• Current RSA (Responsible Service of Alcohol) and local food safety certifications; formal Sommelier certifications preferred.
