Gilson is a highly regarded, high-volume all-day Italian restaurant nestled on Domain Road in South Yarra, directly opposite the Royal Botanic Gardens. Gilson is a local institution celebrated for its relaxed, friendly atmosphere and commitment to simple, classic Italian-focused cuisine with a modern Australian edge. We operate seven days a week, serving a bustling breakfast service, alongside lunch and dinner, with a strong focus on seasonal produce.

We are seeking a dedicated and experienced Breakfast Demi/Chef de Partie to take ownership of the busiest and most crucial service of the day. This role is perfect for a highly efficient and organised chef who thrives on consistency, speed, and precision in a high-volume environment.

The successful candidate will take full ownership of the breakfast section, including:

• Breakfast Execution: Preparing and executing all breakfast items with speed, consistency, and a high standard of presentation during service.

• Section Management: Overseeing the complete setup, preparation (mise en place), and pack down of the breakfast section.

• Quality Control: Ensuring all dishes meet Gilson's high standards and maintaining impeccable hygiene and food safety standards.

• Inventory & Ordering: Assisting the Sous Chef with monitoring breakfast stock levels, receiving deliveries, and minimising waste within the section.

• Proven experience as a Chef de Partie, Demi Chef, or strong Commis Chef in a busy, high-volume environment, with significant experience in breakfast/brunch service.

• Strong technical proficiency, particularly with eggs, plating, and modern breakfast fare.

• The ability to work efficiently and remain calm under pressure during peak service times.

• A positive attitude, reliability, and excellent communication skills within a team.
