Job Description

We're looking for a Breakfast Manager to lead the morning experience across LiTo Restaurant and Presto — two of the Gold Coast's most distinctive venues. This is not a role for someone who manages by spreadsheet. This is a role for someone who is on the floor, knows their guests by name, coaches their team in the moment, and makes every breakfast service feel like the best one yet.

THE ROLE

• Set the standard for every guest interaction — from arrival to farewell

• Know your VIPs, your regulars, and your first-timers — and make each feel like they're the only one in the room

• Handle guest feedback and service recovery with composure, empathy, and ownership

• Create the kind of morning experience guests talk about at dinner

• Recruit, train, develop, and inspire a high-performing FOH team

• Run daily pre-service briefings that energise the team and set clear expectations

• Manage rosters across a 7-day operation, balancing team wellbeing with business needs

• Conduct regular check-ins to identify talent, growth opportunities, and any concerns early

• Foster a culture where people feel seen, valued, and motivated to bring their best every shift

• Oversee daily operations across LiTo Restaurant, Presto café, and in-room dining

• Drive revenue through upselling, product knowledge, and a team that genuinely loves what they're selling

• Manage the daily labour cost across the outlets

Qualifications

ABOUT YOU

• Proven experience as a Restaurant Manager or senior FOH leader

• A natural with people — guests and team alike — who builds trust quickly and communicates with clarity

• Strong commercial awareness — you understand the numbers and know how to move them

• Experience managing rosters, budgets, stock, and the full operational rhythm of a busy venue

• Comfortable with POS systems (Simphony preferred) and reservations platforms (SevenRooms desirable)

• A genuine team builder — someone who develops people, not just manages them
