Head Chef – Nags Head Hotel, Glebe

Nags Head Hotel is looking for an experienced Head Chef to lead our kitchen team and help continue the growth and development of our food offering.

Located in the heart of Glebe, Nags Head is a well-established pub with a strong local following and a food offering that sits at the heart of the venue.

Our focus is on delivering great pub food – approachable, generous and consistently well executed – while also offering something more elevated across our growing functions, weddings and events business.

The kitchen is in a good position, with a talented team already in place. We’re looking for an experienced Head Chef who can bring strong leadership, creativity and commercial thinking to the role, building on what we already do well while continuing to develop the team and grow the business.

The Role

As Head Chef, you’ll take ownership of the day-to-day kitchen operation and work closely with the venue management team to drive the food offering and overall performance of the business.

Your responsibilities will include:

• Leading, developing and mentoring the kitchen team
• Delivering consistently high standards of food quality, presentation and service
• Developing a strong, approachable and commercially successful pub menu
• Continuing to develop our offering across functions, weddings and events
• Bringing new ideas while ensuring the food offering remains aligned with the venue and our customers
• Managing food costs, labour and overall kitchen profitability
• Managing ordering and stock control in line with group procurement requirements and approved suppliers
• Maintaining strong food safety, cleanliness and compliance standards
• Working closely with the venue team to continue growing food, functions and events
• Building a positive, organised and high-performing kitchen culture

About You

We’re looking for someone who:

• Has proven experience as a Head Chef, or is an experienced Sous Chef ready to take the next step
• Has a genuine understanding of what makes a great pub food operation
• Takes pride in delivering quality, consistency and value while still bringing creativity and new ideas to the table
• Can balance a strong core pub offering with a more elevated approach to functions, weddings and events
• Is a strong people leader who enjoys developing and getting the best out of a team
• Understands the commercial side of running a successful kitchen, including food and labour costs
• Is organised, hands-on and comfortable taking ownership and accountability for kitchen performance
• Is comfortable working within established group procurement processes and approved supplier arrangements
• Is collaborative and enjoys working closely with venue management and the wider hospitality group
