About the role
We are currently seeking a Commis Chef/Cook to join our team. We are looking for someone with at least 1–2 years of restaurant kitchen experience, ideally in a fast-paced environment.
The successful candidates will be passionate about food and have strong knowledge of cooking techniques, kitchen operations, and best practices. Experience or a genuine interest in working on the grill and in a busy kitchen is highly valued but not necessary. Full training on the charcoal grill will be provided to improve your cooking skills as well as career pathway progressions within a growing business.
As our restaurants operate seven days a week, applicants must be available to work flexible shifts across the week.

The duties of the position include, but are not limited to:
Operate the Binchotan charcoal grill to prepare and cook yakitori skewers and other grilled items to Bird's Nest's quality and presentation standards.
Prepare, portion, and cook ingredients across grill and kitchen stations, including proteins, vegetables, sauces, and accompaniments, following Bird's Nest recipes and guidelines.
Set up, maintain, and clean your workstation before, during, and after service in line with food safety and hygiene standards.
Assist with stock management, quality checks, and minimising food waste, and support kitchen opening and closing procedures.
Help guide and support junior kitchen staff during service and work collaboratively with the team to ensure smooth operations.
Comply with all relevant food safety, hygiene, and Occupational Health and Safety requirements, and uphold Bird's Nest values of Omotenashi (genuine warm hospitality) and Kodawari (dedication to excellence).
We are also looking for a fast, bubbly, and bright Junior Manager to join our front-of-house leadership and support our management team. We want a dynamic, hands-on team player who loves food and restaurant service, and who's keen to help share our passion for Japanese cuisine with every customer.
We'd prefer someone with some prior supervisory or team-leader experience, but above all we're looking for someone open to learning, enthusiastic in their work, and ready to grow into the role.
Responsibilities include, but are not limited to:
Supporting day-to-day floor supervision, including rostering and shift coordination.
Assisting with stock management and ordering.
Supporting staff training and onboarding of new team members.
Handling customer relations and resolving issues on the floor.
Working closely with the Venue Manager and owners as part of a collaborative management team, helping create a fun, positive working environment.
