Experienced Breakfast Chef / Cook – Modern Australian & Indian Fusion

Roshni by Raj is looking for an experienced Breakfast Chef or Cook to join our busy morning kitchen in Mackay.

We need someone who understands modern Australian breakfast service—strong egg cookery, excellent organisation, attractive presentation and the ability to remain calm when the docket rail fills up.

You do not need Indian cooking experience. We will train you in our North and South Indian-inspired breakfast dishes, recipes and techniques.

ABOUT THE ROLE

You will be responsible for:

• Preparing modern Australian breakfast dishes, including eggs, Eggs Benedict, hollandaise, chilli scrambled eggs, avocado dishes, fritters, French toast and hotcakes

• Organising and running the breakfast section during busy service

• Completing morning preparation and maintaining correct stock levels

• Producing attractive, consistent dishes quickly and efficiently

• Following recipes, portioning and presentation standards

• Maintaining excellent cleanliness and food-safety standards

• Learning our Indian-fusion breakfast dishes, including dosa, uttapam, aloo puri, paneer bhurji, breakfast daal and masala omelettes

ABOUT YOU

You will have:

• Proven experience in a busy Australian breakfast kitchen

• Strong egg cookery and modern breakfast-plating skills

• The ability to organise and confidently run a breakfast section

• Excellent timing and the ability to manage multiple orders

• Reliable availability for early-morning and weekend shifts

• A clean, organised and team-focused approach

• A genuine interest in learning new dishes and techniques
