Housed within the iconic West Olympia Theatre, the hotel features 109 rooms, multiple dining spaces including The Palomar restaurant, Jacob the Angel café, and Monica, the roof-top bar. 25hours Hotel The Olympia will shape and transform the local hospitality scene, welcoming a vibrant and diverse team, bringing its vision to life.

As Bar Operations Manager, you'll lead the venue, shape the drinks offering, motivate a high-performing team, and deliver the kind of hospitality experience that keeps guests coming back for more.

What does your workday look like …

• Keep the numbers as cool as the cocktails by driving profitability, budgets, and forecasting;

• Be organised with stock, suppliers, and costs, making sure the good stuff never runs out, and the margins stay where they should;

• Create drinks people talk about, leading cocktail development, seasonal menus, and beverage experiences that keep guests coming back;

• Build, inspire, and grow a team of hospitality professionals through recruitment, training, and coaching;

• Make every guest feel like they're exactly where they should be, delivering memorable experiences from first drink to last round;

• Run the day-to-day operation with confidence, ensuring service is smooth, standards are high, and the rooftop hums with energy;

• Take the reins as the senior leader on duty when needed, making smart calls and keeping the venue running like clockwork;

• Team up with our kitchen, events, marketing, and leadership to bring big ideas to life and create unforgettable moments;

• Keep us on the right side of the rulebook by championing RSA, safety, compliance, and responsible service standards;

• Build systems that work, maintain exceptional standards, and create an operation that's as efficient behind the scenes as it is exciting out front.

We’re looking for a host, leader, and drinks visionary in one … 

• You have 5+ years of hospitality experience with strong bar management background

• You’re a creative mind with deep knowledge of spirits, cocktails, wines, and all things beverage;

• You have proven success managing bar financials, budgets and labour costs.

• You know how to lead a team with heart, purpose, and professionalism;

• You’re as strong on the floor as you are behind the scenes. From guest engagement to stock and cost control;

• You bring energy, organisation, and a “can-do” spirit that sets the vibe from the top;
