Sella Vinoteca restaurant offers a fresh & modern Italian a la carte menu with focus on the region of Sardinia, where our founder & Executive Chef are from. We showcase traditional ingredients and cooking traditions from Sardinia, as well as cater to a mature Australian customer base. We make our pastas ourselves, take pride in origin on ingredients, and always aim to deliver a memorable dining experience.
We are looking for a chef to assist the Executive Chef with delivering quality dishes, with a focus on handmade pasta, seafood and tapas style dishes. About the role: Menu development, food costing and rostering, delivering a financially viable menu in line with directives from management
Leading the kitchen staff to deliver exceptional Mediterranean food, including following recipes, deliver clear instructions and support staff with training and positive encouragement. Regular reporting to Executive Chef and management Ensure the kitchen team delivers quality dishes, overseeing preparation & final plating, training the staff on new techniques when required.
Work together with management on planning and delivering successful events, including one off menus Training of chefs, cooks & kitchen hands Briefing of floor staff and ensure they are trained on dietary requirements for each dish
Responsible for stock management & ordering; implementing & documenting structure & procedures Assist with selection and training of staff Make sure all equipment is handled in a safe manner, and any maintenance issues are raised promptly with management.
Ensuring OH&S, safe work practices and safe food handling compliance Salary range $79,500 plus super Daily responsibilities:
Oversee kitchen staff, train & educate as needed Receive, prep & rotate stock, whilst maintaining safety standards and checking for spoilt goods Alert management of any incorrect deliveries & unsafe food
Brief staff on new dishes and specials Liase with management about upcoming reservations & group bookings Oversee set up & pack down of kitchen according to safe & hygienic practices
Communicate with kitchen staff members during service to deliver a smooth service, and attention to detail of plated food to ensure the food served meets our quality standards in a timely fashion Requirements: Italian, Spanish and French Cuisine Experience
Great work ethic, attention to detail and time management skills Excellent communication and organisational skills Must be reliable and flexible
Minimum of a relevant Diploma and 1 year of relevant work experience or ? 3 years of work experience to substitute formal qualification
