Summer Chef Call

Oceane Hotel Newcastle is looking for passionate, motivated and professional chefs to join our existing kitchen team.

We currently have two full-time positions available:

• Full-Time Service Chef

• Full-Time Production Chef

FULL-TIME SERVICE CHEF

This position is primarily focused on working as part of our kitchen team during service, taking responsibility for a section and consistently delivering quality food within required timeframes.

Key Responsibilities

• Prepare, cook and serve quality food to a consistently high standard and within set timeframes.

• Follow current Standard Operating Procedures (SOPs) and digital kitchen systems.

• Assist with menu development, ordering and the receiving of deliveries.

• Maintain high standards of food safety, hygiene and workplace health and safety.

• Work efficiently and calmly in a fast-paced kitchen environment.

• Be adaptable, reliable and willing to support the wider kitchen team.

• Maintain a clean, organised and professional workspace at all times.

• Contribute positively to a team environment and help maintain high standards throughout every service.

About You

The successful candidate will have:

• Certificate IV in Commercial Cookery, or be currently undertaking the qualification.

• Experience working across sections within a commercial kitchen.

• A genuine passion for food and quality local produce.

• A minimum of 2 years' experience in a qualified chef role, or be currently undertaking a commercial cookery apprenticeship.

• Strong organisational skills and attention to detail.

• A positive, reliable and professional attitude.

• The ability to work effectively under pressure and as part of a team.

FULL-TIME PRODUCTION CHEF

This is a full-time, preparation position working day shifts, ideal for a chef who enjoys a structured kitchen environment, takes pride in quality and consistency, and values having a weekend free.

The Role

Working as part of our kitchen team, you will be responsible for the preparation and production of food across our operation.

You will play an important role in ensuring the kitchen is well prepared, organised and ready for service every day.

Key Responsibilities

• Prepare food to a consistently high standard.

• Complete daily preparation and production requirements.

• Follow recipes, portion controls and presentation standards.

• Maintain excellent food safety and hygiene standards.

• Ensure stock is correctly rotated, labelled and stored.

• Work efficiently to meet daily production targets.

• Keep preparation areas clean, organised and well maintained.

• Work collaboratively with the broader kitchen team.

• Minimise food waste while maintaining strong product quality and consistency.

• Assist in ensuring the kitchen is fully prepared for daily service.

About You

We’re looking for someone who:

• Has commercial kitchen experience, ideally within a hotel, pub or high-volume environment.

• Has strong preparation, organisational and time-management skills.

• Can work independently while also contributing positively to a team.

• Takes pride in consistency, quality and presentation.

• Has a positive, reliable and professional attitude.

• Understands food safety and kitchen hygiene requirements.

• Can work efficiently and maintain high standards in a busy production environment.
