Chief Steward

Shangri-La Sydney is introducing a new Chief Steward role to strengthen our BOH operations, cleanliness and food safety compliance . This position will work closely with the Executive Chef and Hygiene Manager to enhance audit performance, operational clarity and overall kitchen efficiency.

About the Role

The Chief Steward leads and manages all stewarding operations, ensuring exceptional standards of cleanliness, hygiene, and efficiency across kitchens and back-of-house areas. This role oversees inventory control, equipment maintenance, and food safety compliance, while leading and developing the stewarding team to support seamless F&B operations. The position is key to cost control, sustainability initiatives, and strict compliance with ISO 22000:2018 and HACCP standards.

Key Responsibilities

Operational Management

• Manage the stewarding budget, monitor costs, and optimize resource utilization

• Oversee inventory of ceramic ware, cutlery, and glassware for all outlets and kitchens

• Manage ordering and control of cleaning chemical inventory

• Coordinate banquet setups and ensure timely provision of equipment for functions and buffets

• Maintain garbage room cleanliness and oversee skip bin operations and scrap equipment disposal

• Supervise deep cleaning schedules and ensure food safety compliance

Compliance & Safety

• Conduct Managerial Verification and record compliance in the hotel’s digital platform

• Ensure adherence to ISO 22000:2018, HACCP, and Shangri-La Food Safety (SFS) standards

• Participate in internal and external audits and monthly food safety meetings

• Enforce occupational health and safety standards, including PPE usage and chemical handling

Team Leadership

• Recruit, train, and manage stewarding team members

• Deliver training on SOPs, hygiene standards, and chemical handling

• Conduct performance evaluations and manage disciplinary processes

Equipment & Maintenance

• Manage equipment stores and chemical storage areas

• Oversee maintenance and repair of dishwashing machines and stewarding equipment

• Schedule preventive maintenance to minimize downtime

Cross-Department Coordination

• Liaise with suppliers for oil collection, soaking tanks, pest control, garbage contractors, and chemicals

• Work closely with F&B, Banquets, and Housekeeping to ensure seamless operations

Reporting & Documentation

• Prepare monthly reports on costs, breakages, and inventory

• Maintain accurate records for audits and compliance requirements

Support Functions

• Support the Executive Chef in the absence of the Hygiene Manager

• Assist the Hygiene Manager with daily food safety compliance activities

About the Candidate

• Minimum 3–5 years’ experience in stewarding management within a luxury hotel environment

• Strong knowledge of ISO 22000:2018, HACCP, and food safety standards

• Proven leadership and team management skills

• Strong organizational, problem-solving, and cost control abilities

• Experience with inventory management systems

• Ability to work under pressure and manage multiple priorities

• Familiarity with hotel digital compliance and reporting platforms
