About the role
FOODWISE SOLUTIONS PTY LTD is recruiting a hands-on Chef de Partie to join the kitchen team at The Avenue Randwick, a busy full-service bistro with regular functions. You’ll lead your section, uphold consistent standards, and support the Head/Executive Chef in a quality-driven, high-volume, full-service environment.
Key duties & responsibilities:
Plan, organise and run a designated section (grill, larder, pass, etc.) across prep and service.
Prepare and cook menu items to specification; ensure portion control, quality, and presentation.
Assist with menu planning, specials, costing inputs, ordering, and stock rotation to minimise wastage.
Maintain compliance with food safety (HACCP), hygiene, allergen controls and WHS; keep section and equipment clean and service-ready.
Train, mentor and supervise Commis/Apprentices; provide clear handovers and contribute to rosters.
Liaise with Head/Executive Chef and front-of-house to coordinate service flow, dietary needs and function requirements.
Monitor performance and consistency during peak periods; proactively resolve section issues.
Requirements
Qualification: Certificate IV in Commercial Cookery (or higher Australian culinary qualification).
Experience: At least 1 year full-time recent experience in a comparable full-service kitchen at Chef de Partie (or strong Demi/Chef de Partie) level.
Sound knowledge of HACCP/food-safety standards and kitchen best practice.
Proven ability to lead a section, maintain consistency under pressure, and coach junior staff.
Strong teamwork and communication skills; availability for evenings/weekends and rotating rosters.
