Assistant Venue Manager - Bistro/Hotel - Full Time

About the role

Park Street Bistro is seeking an experienced Assistant Venue Manager to support the General Manager in leading the opening team and delivering consistently strong operational, service and commercial outcomes. Park Street Bistro is a new European bistro opening within The Kurrajong Hotel in Erskineville.

Our service will be warm, polished and knowledgeable, combining the professionalism of restaurant service with the relaxed character of a bistro. This is a hands-on leadership role. You will be visible on the floor, actively leading service, supporting the team and taking ownership of the venue when acting as the senior manager on duty.

You will help establish the operating procedures, service culture and accountability structure of Park Street Bistro from the beginning. This role requires more than opening doors and managing breaks. You must understand service flow, team performance, guest experience, food and wine, sales, labour control and the systems that make a venue successful.

Key responsibilities

• Support the General Manager with the day-to-day operation of Park Street Bistro.

• Act as the senior manager on duty when required.

• Lead restaurant and bar services from briefing through to close.

• Coordinate supervisors, section waiters, bartenders and support staff.

• Allocate sections, breaks, side duties and operational responsibilities.

• Ensure each venue area and operational checklist has a clearly assigned owner.

• Conduct pre-service briefings and communicate daily priorities.

• Monitor table flow, service timing and communication with the kitchen and bar.

• Maintain a strong presence on the floor and support the team during peak periods.

• Ensure the team delivers warm, polished and knowledgeable bistro service.

About you

• A minimum of five years' hospitality experience is essential.

• At least two years' experience in a supervisory or management role within a quality restaurant, bistro or hotel.

• Experience in a European restaurant or European bistro is highly regarded.

• Strong understanding of table service, service sequence and guest experience.

• Strong food and beverage knowledge, with particular confidence in wine.

• Able to speak naturally and confidently about food, wine and menu pairings.

• Proven ability to lead a floor and coordinate a team during busy services.

• Commercially aware, with experience controlling labour, stock and operational costs.

• Current NSW RSA is essential.

• Must have valid Australian working rights. No sponsorship is available for this role.
