Fortress, a gaming lifestyle company, owns and operates a massive, multi-level entertainment venue devoted to gaming – everything from board games, arcade, PCs, and consoles. Situated in Sydney’s Central Park Mall on Broadway, ‘Fortress Sydney’ is an incredible addition to the city’s cultural, tourism, and nightlife offerings.

The 1,000+ capacity venue includes a 400 sq/m, 156-seat live esports arena (the ‘Alienware Arena’), 60+ premium gaming PCs, 250 sq/m arcade, two licensed and originally-themed bars, private party spaces, a full-service Tavern restaurant holding specially created VIP video game booths and designated board game/tabletop areas, merchandise store, dedicated streamer pods, and a live broadcast production facility.

About the role:

We are currently searching for a number of baseline culinary staff looking for a change or to take the next step in their culinary career. This role includes a number of casual Commis Chef & Kitchen Hand opportunities based on experience.

As a member of our kitchen team, you will assist with providing support to kitchen operations and ensure the smooth running of service. You will be responsible for assisting in the setting up & pack down of the Tavern & Arena kitchen areas, the preparation of quality food products and the provision of general support to the Kitchen Manager & Assistant Kitchen Manager as directed.

The role will require you to assist with kitchen operations within the venue. The Tavern operates as our primary a la carte dining experience for patrons of Fortress, with a focus on gaming-themed & pub cuisine. The Arena represents our events space, which caters to a range of different business & Esports clientele up to a capacity of up to 400 attendees.

These roles are expected for a quick start.

The ideal candidate must have:

• Certificate III in Commercial Cookery or a similar qualification, either completed or ongoing, will be an advantage for Commis-level
• Experience working in a fast-paced kitchen environment would be an advantage
• Excellent communication & interpersonal skills
• Be flexible & available to work across a roster including weekdays, evenings, weekends & public holidays
• Energetic & can multi-task & adapt in a fast-paced environment
• Excellent personal presentation & possessing a positive ‘can-do’ attitude.
