Sous Chef – Full Time

30 Acres is seeking an experienced and capable Sous Chef to join our kitchen team in a full-time position at our busy Norwood venue.

This is a senior kitchen role suited to an experienced chef who is confident managing food production and supervising kitchen staff. The successful applicant must be able to take responsibility for kitchen operations when the owner is not present and ensure that food quality, service standards and kitchen organisation are maintained at all times.

Key Responsibilities

The Sous Chef will be responsible for:

• Managing and supervising kitchen operations during assigned shifts.
• Managing the kitchen and kitchen team in the owner's absence.
• Supervising, directing and supporting chefs, cooks and junior kitchen staff.
• Allocating daily duties and coordinating kitchen workflow.
• Preparing and cooking food to established recipes, presentation and quality standards.
• Performing specialised cooking and food preparation duties.
• Ensuring efficient preparation and service during busy periods.
• Monitoring food quality, portion control and presentation.
• Training and assisting kitchen staff in correct preparation and cooking techniques.
• Maintaining effective communication between kitchen and front-of-house staff.
• Monitoring stock levels and assisting with ordering and inventory control.
• Minimising food waste and assisting with food-cost control.
• Ensuring all food safety, hygiene and cleaning procedures are followed.
• Maintaining a clean, organised and safe kitchen.
• Identifying and resolving operational issues during service.
• Assisting with menu preparation, recipe development and maintaining consistency across dishes.

Minimum Requirements

Applicants must demonstrate:

• At least 1 year of relevant commercial cooking experience, including experience as a Sous Chef, Junior Sous Chef, Senior Chef, Chef de Partie or in a similar role.
• A relevant commercial cookery qualification, such as a Certificate IV in Kitchen Management, Diploma of Hospitality Management, or an equivalent relevant qualification.
• Strong commercial cooking and specialised food preparation skills.
• Experience working in a busy, high-volume hospitality environment.
• Strong time-management and organisational skills.
• Proven ability to supervise and manage kitchen staff.
• Strong leadership and staff-management skills.
• Clear and effective communication skills.
• Ability to prioritise multiple tasks and manage kitchen workflow during busy services.
• Ability to work independently and take responsibility for kitchen operations.
• Strong understanding of food safety, hygiene and workplace safety requirements.
• Consistent attention to food quality, presentation and portion control.
• Reliability, professionalism and the ability to remain organised under pressure.

Availability

Applicants must be available to work weekends and public holidays as required.

The position requires flexibility across the operating week, including busy weekend and public holiday services.
