Noẽma is the latest concept from Lucas Collective, bringing a fresh take on contemporary Mediterranean dining to Melbourne’s CBD.

Inspired by modern Greek cuisine, the menu will celebrate exceptional produce, bold flavours and the theatre of Josper-grilled cooking, all within a striking new venue spanning a main dining room, intimate basement and private dining spaces.

About The Opportunity:

We’re looking for passionate Sommeliers to join the opening team at Noẽma. This is a hands-on role focused on exceptional wine service, cellar management and creating memorable guest experiences. Join us from day one and help shape the wine program at one of Melbourne’s newest dining destinations.

Learn from the Best Work alongside Loïc Avril, Group Wine Director, and Yuki Hirose, Group Head Sommelier, who lead Lucas Collective’s wine direction and programs across the group.

The Ideal Candidate: 

• Demonstrated experience as Head Sommelier or Assistant Head Sommelier
• Extensive knowledge of wine, new and old world
• Passion for the wine industry
• Strong understanding of management practices
• Demonstrated experience in leading high-performing teams and exceeding targets
• Exceptional service skills and guest focused
• Experience with stock control and inventory management is advantageous
• Must be up-to-date with industry trends
• Highly adaptable and able to perform in high-pressure service periods
• Proven ability in building effective relationships
• Organisational and time management skills
• Exceptional communication and presentation
• Full time availability including weekends, public holidays, opening and closing shifts
• WSET certification or similar is highly regarded
• Victorian RSA certificate
