About the Role

We are seeking a Full-Time Sous Chef to support the Executive Chef and Chef De Cuisine in leading the kitchen at Blacksmith Bar & Grill. You will play a key role in day-to-day kitchen operations, ensuring consistent food quality, smooth service delivery, and strong coordination across all sections including grill, larder, and pass.

This is a hands-on leadership role, ideal for a chef who thrives in a fast-paced hotel environment, enjoys developing others, and takes pride in delivering high-quality steakhouse dining experiences.

Key Responsibilities

• Support the Executive Chef & Chef De Cuisine in managing all kitchen operations

• Lead by example during service across lunch and dinner periods

• Oversee preparation and execution of dishes across grill, larder, and hot sections

• Ensure consistency, quality, and presentation standards are met at all times

• Assist with menu execution, specials, and seasonal updates

• Supervise, train, and mentor kitchen team members

• Maintain food safety, hygiene, and HACCP compliance at all times

• Assist with stock control, ordering, and minimising wastage

• Maintain a calm, organized, and efficient kitchen during busy service periods

About You

• Minimum of 1 year of experience as a Sous Chef in a hotel environment is highly advantageous

• Background in a steakhouse or high-volume hotel restaurant environment

• Strong leadership skills with the ability to guide and motivate a team

• Solid technical cooking skills with strong attention to detail and consistency

• Passion for modern steakhouse cuisine and quality produce

• Strong understanding of food safety and kitchen operations

• Able to work a rotating roster including mornings, evenings, weekends, and public holidays

• Full Australian work rights are required for this position
