Head Baker - Bakery Manager

About the role

As the Bakery Manager/Head Baker at Tommy Collins Group, you will be responsible for overseeing all aspects of the bakery operations at our Elsternwick location. This is a full-time, on-site role where you will play a key part in ensuring the efficient and profitable running of our busy bakery production. You will have the opportunity to work closely with our talented team of bakers and viennoiserie & pastry chefs to deliver high-quality, artisan sourdough and viennoiserie products to our customers.

What you'll be doing

1. Manage all day-to-day bakery operations, including production, inventory, staffing, logistics and compliance

2. Lead, coach and develop a team of skilled bakers and pastry chefs

3. Ensure consistent, high-quality baked goods are produced in line with company recipes and standards

4. Monitor and control bakery costs, ensuring productivity and profitability targets are met

5. Liaise with suppliers to order ingredients and equipment in a timely manner

6. Implement and maintain food safety and hygiene procedures

7. Contribute to the ongoing development of seasonal new products and recipes

What we're looking for

1. Proven experience as a Bakery Manager or in a senior baking/production role

2. Strong knowledge of baking techniques, recipes and food safety regulations

3. Excellent leadership and people management skills

4. Ability to work well under pressure and meet deadlines

5. Strong numeracy and financial management skills

6. Passion for delivering high-quality baked goods

7. Relevant qualifications in Baking, Patisserie or a related field
