About Us

The Emerald Hotel, an iconic South Melbourne local pub and bistro, is entering an exciting new chapter under fresh ownership following recent, stylish refurbishments. Known for our warm hospitality and loyal following, we are seeking two key hospitality professionals to join our front-of-house team.

As we build our new team and expand our offerings, there is clear room for career progression and advancement within the business for dedicated team members.

Role 1: Experienced Front Bar Attendant / TAB operator

Our front bar is the heart and soul of the pub. We are looking for a mature, customer-focused bartender to take ownership of the main bar operations, building genuine rapport with local regulars while delivering a welcoming atmosphere for new guests.

Key Responsibilities:

· Pouring tap beer, preparing drinks, and managing high-volume bar service efficiently

· Managing cellar operations, including dropping kegs and receiving beverage deliveries. Ability to handle physical duties, including stock receiving and cellar work.

· Operating TAB facilities (TAB accreditation highly regarded, or a willingness to obtain certification)

· Serving as the primary point of contact for phone inquiries, restaurant reservations, and function bookings

Role 2: Bistro Floor Leader / Supervisor

Our bistro enjoys a strong, loyal customer base. We are looking for an experienced hospitality leader to drive service standards, manage daily floor operations, and foster memorable dining experiences.

Key Responsibilities:

· Leading, training, and mentoring bistro floor staff to ensure consistent service standards

· Implementing efficient service systems and floor procedures

· Maintaining active floor presence to build guest rapport and handle customer feedback

· Managing daily floor setup, reservations, and service flow during busy lunch and dinner shifts

What We Are Looking For

· Experience: Proven track record in a busy pub, bistro environment

· Service Focus: Exceptional customer engagement with a warm, personable, and authentic approach.

· Professionalism: Punctual, well-presented, and reliable with a strong work ethic

· Certifications: Current Victorian RSA certificate (TAB accreditation advantageous)
