About the Role

From plated desserts in our award-winning Bacchus Restaurant to dessert stations and sweet treats for conferences and banquets across our 14 event spaces, our pastry section at Rydges South Bank covers a lot of ground. We're looking for a Pastry Demi Chef to join the team, helping deliver consistent, high-quality pastry and dessert items across restaurant, banquet, and conference operations. This role is perfect for someone building their pastry craft who wants exposure to both restaurant-style and large-scale event pastry work in a busy, supportive kitchen.

Key Responsibilities

• Prepare and produce pastry, dessert, and bakery items to specification across restaurant, banquet, and conference operations.
• Work efficiently within the pastry section, maintaining consistency, quality and presentation standards during service.
• Support the Pastry Chef, Sous Chef, and Head Chef with mise en place, stock rotation, and daily preparation.
• Follow all food safety, hygiene, and WH&S procedures, including correct storage and labelling of stock.
• Assist with planning and executing pastry and dessert requirements for conferences and events, adapting to different formats, group sizes and dietary requirements.
• Maintain a clean, organised and well-stocked pastry section, minimising wastage and controlling costs.
• Support the training and development of Apprentices and junior kitchen team members.
• Communicate effectively with Front of House, Conference & Events, and other kitchen team members to ensure smooth service.

What You'll Bring

• Trade qualification in patisserie or commercial cookery, or working towards one, with relevant pastry kitchen experience.
• Experience working across a la carte, banquet, or large-scale event pastry production is highly regarded.
• Good knowledge of food safety and hygiene standards.
• Ability to work efficiently under pressure across a varied and sometimes fast-changing events calendar.
• Strong attention to detail and pride in the quality and presentation of pastry and dessert items.
• A team player with a positive attitude and willingness to learn from senior chefs.
• Flexibility to work a rotating roster, including early mornings, evenings, and weekends around the events calendar.
