We are looking for a passionate and experienced Demi Chef / Chef de Partie – Grill to join our kitchen team. The position level will be determined based on your skills, experience and knowledge.

This is an exciting opportunity for a chef who enjoys working with steaks, meats and live-fire/grill cooking and thrives in a high-volume, semi-fine dining restaurant environment.

Part-time employment is available, with the opportunity to offer full-time hours depending on the successful candidate’s availability and suitability.

About the Role

Working closely with the Executive Chef, Chef De Cuisine and the kitchen team, you will be responsible for operating the grill section during busy service periods, ensuring every steak and meat dish is cooked to specification and presented to a consistently high standard.

You will play an important role in maintaining the quality, pace and efficiency of the kitchen while contributing to a positive and professional team culture.

What You'll Do

• Run and maintain the grill section during high-volume service
• Prepare and cook premium steaks, meats and other grill items to exact specifications and customer preferences
• Demonstrate strong knowledge of steak cooking temperatures, resting, portioning and presentation
• Maintain consistency in quality, flavour and presentation throughout service
• Work efficiently and calmly in a fast-paced, high-volume semi-fine dining environment
• Complete preparation and mise en place for the grill section to ensure a smooth service
• Monitor product quality, portion control and minimise food waste
• Maintain a clean, organised and well-stocked workstation
• Work closely with the kitchen team to ensure efficient service and strong communication between sections
• Follow food safety, hygiene and workplace health and safety standards
• Assist with stock control, receiving deliveries and maintaining appropriate levels of produce
• Support and mentor junior chefs where required
• Contribute to maintaining a professional, respectful and team-focused kitchen culture

What You'll Bring

• Previous experience as a Demi Chef, Chef de Partie or Grill Chef in a upscale hotel, restaurant or similar professional kitchen
• Strong grill experience, particularly with steaks and premium meats
• A solid understanding of different cuts of meat and appropriate cooking techniques
• Ability to consistently cook steaks to requested temperatures during busy service
• Experience working in a high-volume dining restaurant, preferably within a semi-fine dining or premium dining environment
• Strong mise en place, organisation and time-management skills
• The ability to remain calm, focused and organised under pressure
• A genuine passion for quality food and attention to detail
• Strong communication skills and the ability to work effectively as part of a professional kitchen team
• A commitment to high standards of food safety, hygiene and cleanliness
• Flexibility to work across a rotating roster, including evenings, weekends and public holidays
• Full Australian working rights is highly advantageous
