FULL TIME Head Cook - The Mill Hotel - Brisbane City

Tower Mill Hotel Brisbane is located in Spring Hill. 70 room property with onsite pub (gaming, bar and bistro) open each day from 7am till late.

Head Cook - The Mill Hotel Bar

Currently the kitchen is open from 0700-1100, 1130-1430, and 1700-2100 daily.

We are looking for a Head Cook to help our pub reach the next level. Menu refresh, ideas, and promotions. Head Cook to manage all rosters, staffing. Work closely with the Bar and Hotel Manager.

As a successful candidate you will have:

• Previous experience required
• Cleans food preparation areas as determined by law and company policy
• Prepares foods to the specifications of the guest/customer and the company
• Prepares food before the arrival of guests
• Adjusts food items to accommodate guests/customers with allergies or specific diet concerns
• Oversees other employees in the kitchen - hires, rosters.
• Acts as liaison to front-of-house employees to ensure proper food service temperature
• Seasons food according to recipes or company needs
• Operates various kitchen appliances such as a blender, oven or grill
• Portions, arranges, and garnishes food based on guest/customer preference
• Assists other cooks during the food assembly process
• Estimates expected food consumption and organised preparation
• Cleans up after business hours
• Communicates with owner about how to improve meal service
• Alters dishes based on consumer suggestions or requirements
• Complete required checklists for cleaning, hygiene, temperature control, transportation of food etc.
