Inspired by many memorable meals in Tulum, native Mexican elements like poblanos and pasillas chiles, varieties of corn like pozole and Mayan chocolate (Xocolatl) have been imported and married with unmistakably Australian ingredients: finger lime, saltbush, pickled cumquat, local beef and seafood to achieve an unforgettable culinary experience in a luxe Caribbean setting.

Alegre Bar and Dining operates 6 Days a Week for Lunch and Dinner.

Summary of Duties & Responsibilities

· Setting up service station as per restaurant standard.

· Preparation, cook and seasoning food for day to day operational management.

· Monitoring quality of dishes at all stages of preparation and presentation, collaborative discussion of any food preparation management and/or issues with Head Chef, Managers, Dietitians, kitchen and waiting staff, with forward solution focus.

· Ordering, receiving food items and storing them at right temperature and place

· Effective participation in controlling desired food cost and minimising food wastage

· Following Food Safety & OH&S policies

· Maintaining Temperature Log Book & Cleaning/maintenance schedule

· Must be organised and able to work both independently and as a supportive team member

Skills and experience

· Minimum 2-3-year experience as Cook

· Commercial Cookery degree would be an advantage, however, not mandatory.

· Must be reliable, punctual and own reliable transport desirable.
