Head Barista – Full Time | Mamma G’s

Be part of something exciting as Mamma G’s brings its signature deli and café experience to Coolangatta, serving quality coffee, generously filled sandwiches, grab-and-go bites and gourmet deli products in a fast-paced coastal venue.

We’re looking for an experienced and passionate Head Barista to take ownership of our coffee operation and lead the wider front of house team. This is a hands-on leadership role for someone who is serious about coffee, hospitality and setting high standards.

About the Role

As Head Barista, you’ll be responsible for delivering exceptional coffee consistently, while leading and developing the bar team to ensure every coffee, every customer and every service meets the Mamma G’s standard.

You’ll be on the tools, setting the pace and leading by example. You’ll have a strong eye for detail, understand what great coffee looks like and be confident coaching others to achieve the same standard.

This is a full-time position and an exciting opportunity to help establish the coffee culture and standards of a brand-new venue.

What You’ll Be Doing

• Take ownership of the day-to-day coffee operation and bar

• Prepare consistently exceptional espresso coffee and hot beverages

• Set and maintain coffee quality, presentation and service standards

• Dial in grinders and manage coffee extraction throughout service

• Train, coach and develop baristas to consistently meet our standards

• Lead by example during busy service periods

• Ensure the team understands coffee, menu items, specials and service expectations

• Monitor coffee quality and make adjustments throughout the day

• Maintain a clean, organised and well-stocked coffee station

• Manage coffee, milk and bar stock levels and communicate ordering requirements

• Ensure equipment is cleaned, maintained and cared for correctly

• Assist with customer service, POS and general café operations as required

• Reinforce food safety, hygiene and workplace standards

• Help create a positive, energetic and welcoming atmosphere for both guests and the team

What We’re Looking For

• Minimum 3+ years’ experience as a barista, ideally in a busy, high-volume café environment

• Previous experience leading or supervising a team

• Strong knowledge of espresso, extraction, grinders and coffee equipment

• Excellent attention to detail and a genuine commitment to coffee quality

• Confident training and coaching other baristas

• Ability to lead a team while remaining hands-on during service

• Strong customer service skills and a warm, engaging personality

• Ability to stay calm, organised and focused during busy periods

• High standards of cleanliness, presentation and organisation

• Reliable, professional and well presented

• Strong communication skills and a positive team attitude

• Flexibility to work across weekdays and weekends as required
