About the role

We are seeking passionate and skilled chefs to join our culinary team at Ballina Byron Islander Resort & Tavola Restaurant Bar. These are casual positions based in Ballina NSW 2478, offering flexible working arrangements for talented culinary professionals. We are recruiting for two key roles: a Pizza Chef and a Sous Chef. These positions are integral to our kitchen operations, supporting the delivery of outstanding food and dining experiences that define our restaurant's reputation. You will work collaboratively with our head chef and kitchen team to maintain the highest standards of food preparation, presentation, and quality.

Key responsibilities

For the Pizza Chef role:

• Preparing and cooking pizzas to the highest standards, ensuring consistency and quality across all orders

• Managing the pizza station and maintaining cleanliness and organisation of the work area

• Following recipes and plating standards to ensure every dish meets our restaurant's expectations

• Collaborating with the kitchen team to manage service times efficiently

• Responding to customer feedback and special dietary requirements where applicable

• Maintaining food safety and hygiene standards at all times

For the Sous Chef role:

• Supporting the head chef in overseeing daily kitchen operations and food preparation

• Overseeing the head chef position during leave periods

• Preparing and cooking a variety of dishes to specification, maintaining quality and consistency

• Training and mentoring junior kitchen staff as required

• Managing inventory and coordinating with suppliers to maintain stock levels

• Ensuring strict adherence to food safety standards and hygiene protocols

• Assisting with menu development and seasonal specials

• Managing kitchen stations and ensuring smooth service during busy periods

What we're looking for

For the Pizza Chef position:

• Proven experience cooking and preparing pizzas in a professional kitchen environment

• Strong knowledge of traditional and contemporary pizza techniques

• Excellent time management and ability to work efficiently under pressure during service

• Attention to detail with a commitment to food safety and hygiene standards

• Ability to work collaboratively within a team environment

• Good communication skills and a positive attitude towards feedback

• Flexibility to work casual hours as required

For the Sous Chef position:

• Minimum 2 years of professional kitchen experience in a supervisory or senior role

• Strong culinary skills with the ability to prepare a diverse range of dishes to a high standard

• Proven leadership experience, with the ability to train and mentor junior staff

• In-depth knowledge of food safety regulations and kitchen hygiene protocols

• Experience with stock management, costing, and kitchen operations

• Strong organisational and problem-solving skills

• Ability to remain calm and maintain high standards during peak service times

• Flexibility to adapt to changing menu requirements and seasonal specials
