Pastry Cook

Sweetas Bakehouse, operated by Skeetas Restaurant Pty Ltd, is seeking an experienced Pastry Cook to join our Geraldton team.

This is a hands-on pastry production role responsible for preparing, baking, finishing and decorating of cakes, biscuits, slices and other pastry and baked products, with a particular focus on custom celebration cakes.

The successful applicant will contribute to daily production and coordinate customer cake orders and production schedules to ensure products are completed to the required quality, food standards and within customer deadlines.

About the Role

As our Pastry Cook, your primary responsibility will be producing high-quality custom celebration cakes and other pastry and bakery products, managing the complete production process from ingredient preparation and baking through to decorating, finishing and presentation. The position also involves consulting with customers regarding custom cake requirements and coordinating orders to ensure production deadlines are met.

Key Responsibilities

• Prepare and bake cakes, biscuits, slices and other pastry and bakery products.
• Weigh and measure ingredients according to recipes and production requirements.
• Mix and prepare cake batters, doughs, fillings, icings, ganache, buttercream and other pastry components.
• Monitor baking times, oven temperatures and product quality throughout production.
• Design, decorate and finish custom celebration cakes using fondant, buttercream, ganache, icing and other decorative techniques.
• Produce cakes and other products consistently to Sweetas Bakehouse recipes, specifications and presentation standards.
• Prepare and finish slices, cake pops, biscuits and other products for our retail range.
• Check the quality of ingredients and finished products.
• Plan and coordinate daily cake and pastry production to meet customer orders and deadlines.
• Prepare fillings, creams, icings, glazes and pastry products using establish recipes.
• Operate and maintain bakery equipment.
• Minimise product wastage and monitor stock rotation.
• Maintain appropriate stock levels of pastry ingredients and production supplies.
• Maintain clean and hygienic pastry production areas, equipment, utensils, baking trays and work surfaces in accordance with food safety and workplace requirements.
• Liaising with customers regarding custom cake designs, flavours, sizes, order requirements to ensure products are delivered to specification and on time.
• Take and confirm customer cake orders and maintain accurate order information.
• Assist with the presentation and display of finished cakes and other products within the Sweetas Bakehouse retail store.
• Work collaboratively with other bakery and production staff to ensure efficient daily production.

Skills and Experience

Applicants must have:

• Minimum 3 years full-time relevant experience as a Pastry Cook or equivalent or an appropriate trade qualification together with at least 2 years of relevant post qualification experience
• Demonstrated experience preparing and baking cakes, biscuits, slices and other pastry products from raw ingredients.
• Demonstrated experience producing and decorating high-quality custom celebration cakes.
• Strong cake decorating skills including experience with fondant, buttercream, ganache and other finishing techniques.
• Knowledge of baking methods, ingredient preparation, recipes and production processes.
• The ability to monitor product quality throughout preparation, baking and finishing.
• Excellent attention to detail and presentation.
• The ability to manage multiple production requirements and customer deadlines.
• Sound knowledge of food safety, hygiene and workplace cleanliness requirements.
• Good communication and customer service skills.
• The ability to work independently and as part of a small production team.
• The ability to work efficiently in a fast-paced bakery environment.

Relevant pastry, baking, commercial cookery or equivalent trade qualifications (Certificate IIII in Cake and Pastry, Certificate III in Commercial Cookery (with relevant experience) or an equivalent overseas qualification. Applicants with substantial relevant industry experience may also be considered.

Salary: $74,000 – $85,000 per annum plus superannuation
Experience: Minimum 3 years relevant experience as a Pastry Cook or equivalent or an appropriate trade qualification together with at least 2 years of relevant post qualification experience;

Saturday availability is an essential requirement of the position.

This is a full-time position involving predominantly daytime shifts.
